Cake Mix Cookies
Cake Mix Cookies?! Yep! And the recipe starts with just 3 basic ingredients. These cookies are very quick and easy to make with the help of a cake mix.
Use any type of cake mix you want and add whatever you like. Also, you can make them into “lollipops” or sandwich cookies. At the end of the recipe I’m listing a multitude of variations for you to try.
This is a recipe for cookies that the children can help make and decorate. You supervise and watch them get creative. (You don’t need an electric mixer to make these but you will be using an oven, so your adult supervision is essential.)

1 box (15.25 to 18.9 ounce) cake mix
1/2 cup vegetable oil (use 1/3 cup vegetable oil for 15.25 oz. cake mix)
Heat the oven to 350º.
In a large bowl, mix together the cake mix, eggs, and oil.
Roll the dough into little balls and place them on an ungreased cookie sheet. You can also spoon them onto the cookie sheet and shape them into a round.
Bake for about 10 minutes. (They will puff up while baking, but when they cool they will flatten into a soft, chewy cookie.) Remove from the oven and let set on the cookie sheet for just a few minutes. Then, using a spatula, move the cookies to wire racks to cool completely.
Makes about 4 dozen cake mix cookies depending on the size of the cookies.
Store in an airtight container.
Try any of these variations and ideas for your cake mix cookies or make a combination that sounds good to you or to use what you have on hand.
Cake mix – Use any flavor of cake mix and choose additions to enhance the flavor.
You might want to try a chocolate cake mix and add chocolate chips. And maybe add some chopped walnuts.
How about a white, yellow, or chocolate cake mix with plain or colored sugar or sugar sprinkles dusted on the cookies before they go into the oven? (And you’ve got sugar cookies.)
Food coloring may be added to the dough from a white or yellow cake mix to make colored cookies. The color of the cake mix batter is going to change the color a little bit.
Choose a confetti cake mix for ready made party colored cookies.
How about a lemon cake mix with grated lemon rind and a teaspoon of lemon extract added?
For the sandwich cookies, use any combination of cake mixes and frostings. Frost the bottoms of your baked and completely cooled cake mix cookies and put two together like a sandwich.
If you can get a spice cake mix, it makes a really delicious cookie for the Fall.
You can use a decorators icing or royal icing or use premade frosting to ice your cookies or do writing and decorating.
There are lots of possibilities. And you will probably come up with many more.
For a healthier cookie, use an organic cake mix. Gluten-free cake mixes are also available. And for a vegan cookie, select a cake mix that is free of animal products and use one banana mashed or ½ cup of applesauce for the 2 eggs.
Flavorings and extracts – Add a teaspoon of vanilla, lemon, or peppermint extract, or add a tablespoon or so of grated lemon or orange peel. (Use just the colored part of the peel.)
Chocolate chips – Use chips, chunks, or minis of semisweet chocolate, milk chocolate, white chocolate, carob, butterscotch, or m&m’s.
Nuts – Use any type of nuts - walnuts, pecans, peanuts, almonds, macadamias or a nut grown locally in your area.
Fruits – Use all kinds of dried fruits (such as raisins or cranberries), diced apples, shredded coconut, very well drained canned crushed pineapple.
Sugars – Sprinkle with plain or colored sugars or sugar sprinkles before baking.
Spices – Add a teaspoon of cinnamon to the dough or roll the balls of dough in a cinnamon sugar mixture before putting them on the cookie sheet.

Shapes – Spoon onto the cookie sheet, shape, and bake; roll into balls and bake; or slightly flatten and bake; or place flattened balls into lollipop or popsicle sticks (sticks are available at crafts stores) and bake; or put 2 flattened, baked, and cooled cookies together with a filling of frosting to make sandwich cookies.
